There are two cardamoms and they are
completely different spices. The small
green cardamom — delicate, floral, sweet —
is well known in Western kitchens. But the
large black cardamom, Thulo Alaichi, is
something else entirely. Smoky, earthy,
camphor-cool, with a bold resinous depth
that green cardamom could never replicate.
It is the cardamom of the mountains.
Thulo Alaichi — large cardamom in Nepali —
grows in the high-altitude forests of the
Himalayas and is traditionally dried over
fire, which gives each pod its distinctive
smoky character. Nepal is one of the world's
largest producers of large black cardamom,
and the pods grown here at altitude are
considered among the finest on earth —
larger, more aromatic, and more intensely
flavoured than varieties from lower
elevations.
In Nepali and South Asian cooking, Thulo
Alaichi is irreplaceable. It is the spice
that gives biryani its depth, that anchors
a garam masala blend, that transforms a
slow-cooked meat curry from good to
extraordinary. Unlike green cardamom,
which perfumes a dish, black cardamom
grounds it — adding a smoky, cooling
complexity that builds through long cooking
and cannot be substituted.

from the Himalayan highlands of Nepal and
packs the whole pods in small batches in
Kathmandu to preserve their full smoky
aroma.
Use whole pods in biryani, pulao, and
slow-cooked curries — crack slightly
before adding to release more flavour.
Include in garam masala and khada masala
blends. Simmer in meat stocks and broths
for extraordinary depth. Toast briefly
in dry heat before use to intensify
the smoky character.
